Are you making already making plans for Thanksgiving Dinner? This week I have two great recipes that you can incorporate into your meal. Both are gluten free, yeast free, dairy free, wheat free, but full of great taste! My menu this year is going to be a quick cooking one. In the past, I usually bake a turkey and there is always so much leftover. This year, I am going to use a turkey breast that I will debone. Then I am going spread stuffing on the breast and roll it up and bake it. It will not take near the amount of time to bake and with each bite you will get turkey and stuffing. I'll be making the wonderful gravy that I have for you this week along with the cauliflower and butternut squash recipe. And, for a different taste I am making my wonderful Brussels sprouts with lime (from Issue 37). Alright, I am getting hungry! So, let's change the subject. This weeks article is all about Jumpstarting Your Metabolism, which you will need to do with all the eating about to take place! Have a great week and stay healthy!

Jumpstart Your MetabolismIs metabolism an unfamiliar word to you? Do you wonder what metabolism has to do with losing weight? Metabolism is a term used to describe the speed at which your body utilizes food and turns it into energy. Metabolism occurs in our muscles and in our organs as a result of the calories that we burn up. You may hear people refer to "basal metabolism.” This is the metabolic rate or the caloric expenditure that is needed by the body to maintain basal body functions. Basal body functions include the beating of your heart, your breathing, and the degree to which you have muscle tone. Basal metabolism is the rate at which your body is doing all of this while your body is at rest (sleeping or in a reclining position). There are about 75% of your daily calories that are expended in basal metabolism. You have at your disposal many ways in which you can boost or speed up your metabolism. When you boost your metabolism you burn more calories which when you are overweight will mean that you will lose weight. You can make sure that you always eat a healthy breakfast. Skipping breakfast by fasting gives your body the false idea that you are starving and it goes into a protective mode and slows down your metabolism. When your metabolism slows down you burn less calories and do not lose weight, in fact you can gain weight. It is also much healthier to eat 5-6 small meals throughout the day instead of the 3 large meals that we have programmed to eat. Researchers have also demonstrated that eating earlier in the day can help you to lose weight. Your last food of the day should be eaten at least four hours before bedtime. Restricting your caloric intake can be devastating to your metabolism. It is important that you eat a minimum of 1200 calories each day. If you eat fewer calories each day, you will send your body into starvation mode by slowing down your metabolism. Another great tip to increase your metabolism is to avoid drinking alcoholic drinks as alcohol depresses your metabolism and also can stimulate your appetite. It is important to exercise every day. The best type of exercising is to participate in aerobic exercises such as walking, jogging, swimming, cycling, or aerobic dancing. It is best to exercise in the mornings. When you exercise everyday your metabolism will kick into high gear and you will lose weight faster. When you have toned muscles, your metabolism speeds up. You can tone up your muscles by doing weight training. Another way to tone muscles is to use your own body weight in resistance training such as push-up, triceps dips, the crab walk, and the bear crawl. You can also be physically active in the little everyday stuff that you do such as when you park your car at work, school, recreational situations, or when you shop. Park as far from the entrance as you can so that you have to walk further. Tasty Thanksgiving Treats Here are two great recipes for you to try on Thanksgiving. I bet you will get rave reviews! You don't even have to tell them that it's healthy. Roasted Cauliflower and Butternut Squash
Pre-heat your oven to 425°. Lightly grease a large baking sheet or pan with some Extra Virgin Olive Oil. In a large bowl combine cauliflower florets, butternut squash cubes, garlic, and shallots. Drizzle with olive oil. Sprinkle with salt and freshly ground pepper. Pour onto a baking pan and distribute the sprigs of fresh rosemary around the pan, leaving the leaves on the stalk. Bake in oven for about 20-25 minutes. Stir the veggies and try to flip them over so that they can caramelize on the other side. If they are looking dry, drizzle with a bit more olive oil. Bake another 10-15 minutes until the squash is fork tender. Remove from oven and cover for 5-10 minutes so that the veggies can "sweat" causing juices to form on the bottom of the pan. Pick the rosemary out and set aside. Transfer the veggies to a serving dish with a slotted spoon. Use the juices left in the pan to "de glaze" the pan by scrapping the caramelized bits off the bottom. Pour over the cauliflower and squash. Garnish with a spring of Rosemary, or remove the leaves from the stalks and sprinkle across the top and toss lightly to mix. Great Gluten Free Gravy For anyone who must avoid wheat flour and gluten, this is the gravy for you! 2 cups Turkey Broth, hot In a small saucepan, over medium heat, whisk dry ingredients into hot water until free of lumps. Bring to a boil while stirring; turn heat to medium-low and cook an additional 2 minutes. **I grind lima beans, great northern's or any other white bean in my grain mill to make a flour. If you do not have a grain mill, use your blender or purchase a bean flour from Bob's Red Mill available in your organic section of your grocery store. |
