Diva's DittiesSorry that I haven't written in a few weeks. Our family has been on the road. We have spent a week in Tampa and a week in St. Louis. It is fun to be able to take the entire family with us when we travel for business - One of the perks of home schooling!

If you are like me you are starting to gear up for the holidays. In fact I decorated for Christmas already. I know it is kind of early, but I am out of town again this weekend and by the time I get home it will be close to Thanksgiving. So, I figured I would get it done early and as Forest Gump would say, "It's just one less thing!"

I've got a some great recipes for you this week using pumpkin. We were in the mountains a few weeks ago and I picked up some beautiful pie pumpkins. So that is what I am using this week. I know you will love them.

Also, many of you have asked my view of the new sweetener Truvia, so that is my topic for this weeks article. Let me know what you think and if you have any further information.

Truvia Truths

I have been asked recently what my thoughts are on the new sweetener Truvia, developed by the Cargill company. Rebiana is the common name for the new extract derived from
the stevia plant used to make Truvia.  It is marketed as a natural sweetener that comes from the stevia leaf rather than from a lab like the other popular artificial sweeteners.

The company claims that “Truvia consists of the best-tasting components of the stevia plant.”  If you have ever used too much stevia in your tea, you know that it can become quite bitter.  Thus, the reason for this claim.  However, when checking the label carefully, it seems that there are other ingredients along with the Rebiana.  Included are Erythritol, which is a sugar alcohol, and “natural flavors” added to enhance the sweet taste. 

The Erythritol is used as a filler or bulking agent in Truvia. It is an odorless white, crystalline powder with a clean, sweet taste that is approximately 70% as sweet as sugar, which makes Truvia taste even sweeter.  Other benefits to Erythritol is that it does not promote tooth decay, and it has only 5% the calories of sugar. Because erythritol is rapidly absorbed in the small intestine and rapidly eliminated by the body (within as little as 24 hours), laxative side effects and gastric discomfort are sometimes associated with excessive use. 

The natural flavors are usually monosodium glutamate (MSG), which I consider a big no-no.

So, do I recommend Truvia?  Out of all of the “packet” sweeteners, whether pink, yellow, blue and now “green and white” (the Truvia colors) I would choose Truvia.  However, before I used it I would use plain, all natural stevia powder or liquid.  And, if sugar is not a problem for my family, I would use raw, local honey and unprocessed natural sugars, like Succanat.®

Healthful Pumpkin Muffins

These are a wonderful spice muffin with a surprise ingredient - baby food!

3/4 cup organic, prunes (baby food in glass jars)
2 cups whole grain flour, (can use oat flour)
1 tsp cream of tartar
1 ½ tsp cinnamon
¼ tsp nutmeg
1  egg ( can use Bob's Red Mill egg replacer)
3/4 cup mashed, cooked pumpkin
2 tsp baking soda
½ tsp salt
¼ tsp ginger

 

Beat the egg and then add the prune baby food.
Mix all the dry ingredients together well.
Then add the dry ingredients to the wet ingredients. Fill greased muffin tins 2/3 full. Bake at 375° for 20-25 minutes.

Spiced Pumpkin Smoothie

A great drink to start your morning off right packed with loads of vitamins, minerals and great taste!

1/2 cup mashed, cooked pumpkin
1 1/4 cup of vanilla rice milk, almond milk or mimmicreme
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground allspice
One dropper full of liquid stevia, or
1-2 TB raw honey
A splash of Vanilla Extract **
3-5 ice cubes

Mix all ingredients except ice cubes in a blender and blend until well mixed. Add ice cubes and blend until frosty.

* Add more punch to this delicious smoothie by including a scoop of protein powder. Check out my recommendation below of a great one.
